You don't have to like coffee to love Chef Bobby Buzz Espresso Rub. The rub creates a balance of tastes and flavor that engages all your senses. (Taste happens in the mouth; and flavor happens both in the mouth and with the olfactory nerve in your nose.)

The dark-roasted coffee beans are freshly-ground for us and contribute to the aroma, obviously, but also help carmelization and form a crispy crust to seal in the natural juices. There's also a hint of heat in each bite. It won't burn you, but it creates a pleasant warming, which helps your taste buds pick up on all the premium herbs and spices we use to create this rub.

HOW DOES IT WORK?

Hey, we‘ve got the science thing working on our rub—all those years in second grade are gonna pay off for you right now. On your tongue you have nerve receptors for 5 different tastes, or taste buds.  Sweet, salty, sour, bitter and umami…..what?????  I bet you didn’t even know about the last one.  Umami is a japanese word for “the peak of flavor” or the taste of savory or fat.  Some foods full of umami are soy sauce, anchovies, butter, truffles, smoked meats, and coffee. Well, there's a surprise, but I think you get it.

Generally you need about a half-teaspoon to a teaspoon of the rub on each side of whatever you're cooking. I also leave some moisture on the surface of the food, or brush it with olive oil, before I rub it down with the buzz. It really helps to let the food rest at room temp. for 15 to 20 minutes to let the moisture activate the essence of the spices.

So while it may not be rocket science, rest assured the guys from NASA could never make your food taste as good as it does with a dose of the “buzz”.
