Grilled Corn Biscuit

4 C. Jiffy Corn Muffin Mix
2 C. Sweet Corn
1 T. Sugar
2 T. Minced Chives
1+1\2  C. Buttermilk
1 Tsp. Hot Sauce Or To Taste
½ C. Clarified Butter

  • Combine all ingredients and mix well.    
  • Heat a non-stick skillet and add butter.
  • Spoon 2 tbls  of batter per cake into pan or on griddle flatten till about 3/8 to ½ inch thick.
  • Sauté until golden on each side and reserve for service. 
  • At service time place in a 350  oven for 5 min till heated and cooked through.
