Espresso-Rubbed Black Bean Burger

2 cups Cooked Jasmin Rice
4 cups Cooked black beans
1 medium onion, diced fine
4 cloves garlic
½ large red bell pepper, diced fine
1 medium carrot, grated
2 tbsp. Evoo (Extra Virgin Olive Oil)
1 tbsp. Chef Bobby Buzz Espresso Rub™ (purchase below)
1 tbsp. Corn starch
2 eggs

  • Saute onion, garlic, carrot and pepper in evoo just until they start to brown. 
  • Add Chef Bobby Buzz Espresso Rub™ and saute for 30 seconds or so.
  • Add black beans and the rice.
  • Mix well over low heat.
  • Remove one cup of the mixture, and puree in food processor.  Return the puree to the rest.
  • Add corn starch and eggs, mix well. You may need to puree some more veggies. But you are looking for a mixture that can be pattied like a burger and still have some texture of whole beans and rice. 
  • Dredge patties in flour and pan saute until hot through and browned.
