Black Bean Dip with Espresso Rub

1 small can of Black Beans, drained
2 tbsp olive oil
1/4 cup fine diced Onion
2 tbsp fine diced Red Bell Pepper
1 tbsp minced Garlic
1 cup Monterey Jack Cheese, shredded
2 tsp Chef Bobby Buzz Espresso Rub™
Heavy Cream as needed

  • Puree beans in food mill or processor until as smooth as you desire.   
  • Sauté onion, garlic and red bell pepper in olive oil.
  • Add sautéed veg to pureed beans and mix in with the Chef Bobby Buzz Espresso Rub™.
  • Adjust thickness with heavy cream.
  • To serve, top with shredded cheese and heat in a microwave until cheese is melted and bubbly.
