Chef Bobby Buzz Cherry Sauce

While there is no Chef Bobby Buzz Espresso Rub in this sauce, it works well with roasted pork and chicken that has been prepared with Chef Bobby Buzz Espresso Rub. I also like it on cornish hens and on seared duck breast.

2 Tbls. Vegetable oil
1\2 c. chopped red onions
pinch. crushed red pepper
½ c. dried cherries
 2 Tbls. brown sugar
pinch. salt
1 c. water
1 c. diced apples
2 Tbls c. cider vinegar

  • Sauté onions in vegetable oil till they start to brown. 
  • Add red pepper and sauté for 1 min.
  • Add cherries brown sugar salt and water, and simmer till cherries have absorbed the water. 
  • Add apples and vinegar and reduce to desired thickness.
